Brunch at The Falzone's: Spinach & Goat Cheese Frittata
It's Sunday!! Which means BRUNCH! My favorite meal. I invited my best friend Jess over, well she kind of invited herself, and I decided to make brunch! She brought the fruit salad and our Goddaughter, Anastasia, and I brought the breakfast!
On the menu was turkey bacon, breakfast sausage, croissants, banana muffins, s'mores tarts, coffee and one amazing spinach and goat cheese frittata that my husband and I whipped up! Anytime we are in the kitchen together we come up with something new and amazing to add to our cookbook and today's recipe was something special.
Spinach & Goat Cheese Frittata:
Ingredients:
9 Whole Eggs
1/2 tsp. Salt
1/4 tsp. Pepper
1/2 C. Grated Parmesan Cheese
4oz. Goat Cheese
2 TBS. Milk
1 C. Frozen Spinach
2 Cloves Minced Garlic
1/2 Medium White/Yellow Onion
1 TBS. Olive Oil

Spinach & Goat Cheese Frittata:
Ingredients:
9 Whole Eggs
1/2 tsp. Salt
1/4 tsp. Pepper
1/2 C. Grated Parmesan Cheese
4oz. Goat Cheese
2 TBS. Milk
1 C. Frozen Spinach
2 Cloves Minced Garlic
1/2 Medium White/Yellow Onion
1 TBS. Olive Oil
Directions:
- Preheat the oven to 350 degrees.
- In a mixing bowl beat the eggs and mix in the parmesan cheese, milk, salt and pepper, set aside.
- On the stove cook the olive oil and onions until the onions are translucent, add in the garlic.
- Put the frozen spinach in a bowl and cook in the microwave for 2 minutes and then add to the onions and garlic, cook additional 5 minutes.
- Pour the egg mixture into a 8x8 pan, we did square but you can do round, whatever you have.
- Add the spinach mixture and blend together in the pan.
- Add to the top, pieces of the goat cheese in different sizes.
- Cook for 30 minutes or until you can stick a fork in and nothing comes out, the top and sides should be a golden brown, too.
